Let’s talk about breakfast, shall we? I’ve been making these banana oatmeal pancakes in the morning. They are gluten-free, dairy-free, and sugar-free. Also, so much healthier than any mix you can get at the store.

The ingredients are simple, just as I like all my recipes — bananas, oats, and egg. That’s it!

During the week, mornings are quite busy. I have about 1 hour to get myself and the kids ready. So these pancakes were perfect for us. They take me about 5-10 minutes, and the whole family loves them.

Including Belle, and let me tell you that she’s never been a fan of bananas. It’s one of the only fruits she wouldn’t eat on its own, but she is okay with banana pancakes, go figure! These banana oatmeal pancakes happen to be Liam’s favorite breakfast too. But no surprise because this kid thinks he can solely survive on bananas.

Okay, so the first thing about making these pancakes is choosing the bananas. Always go for ripe bananas. I’ve mentioned this before, but the more brown spots on your banana, the more health benefits you get from the fruit. So the next time your bananas start turning brown, and you consider throwing them away, make some banana oatmeal pancakes.

You can skip the oats. You can make the recipe with just bananas and an egg if you are going for a low-carb alternative. However, I like adding oats because it makes the mixture a bit thicker. On top of that, oats are incredibly nutritious, full of antioxidants and fiber, and they keep me full longer.

Easy Banana Oatmeal Pancakes

Makes 3-4 small pancakes.

Ingredients

  • 1 banana
  • 1 egg
  • 3/4 oats
  • cinnamon (optional)

Instructions

  • Use a fork to smash the banana in a bowl.
  • Add the oats and egg and mix well. Then add the cinnamon and mix again.
  • Heat a skillet over medium heat, add a little bit of vegetable oil.
  • Then pour 1/3 of the mixture in the pan. Cook each side for about 1-1.5 minutes (or until golden brown).

Notes

You can drizzle some maple syrup, honey or mash berries on your pancakes. I personally like them as they are and they taste sweet enough to me.

    Have you substituted applesauce for the banana? Do you think that would work?

    Mine turned out a bit on the dry side when I first mixed up this recipe. HOWEVER, I put my mix in the oven on 350 and left them for roughly 10 minutes and they turned out really good!!! I also added ginger and they taste like banana bread! Super yummy!

    I love these pancakes!! I did add just a sprinkle of cinnamon to the mixture. Just one egg, one ripe banana and enough oat flour(I put some oatmeal in my blender until it was flour consistency), added just sprinkle of cinnamon. I can only eat one pancake, and this makes enough for 2 so I just covered what was left in bowl and had another the next morning. After having these I will never want another plain pancake. Delicious and easy!!

    I love these pancakes!! I did add just a sprinkle of cinnamon to the mixture. Just one egg, one ripe banana and just enough oat flour(I put some oatmeal in my blender until it was flour consistency), added just sprinkle of cinnamon. I can only eat one pancake, and this makes enough for 2 so I just covered what was left in bowl and had another the next morning. I used coconut oil in the skillet, put some honey on top of cooked pancake. Delicious and so so easy!!
