Today’s simple salad dressing is my go-to dressing. I use it on all the salads I make, and it’s just simple and delicious.
It has only 3 ingredients, vinegar (preferably apple cider vinegar, which lowers blood sugar levels, cholesterol and improves heart health), extra virgin olive oil, and salt. Easy, right? Lately, I’ve been adding some freshly squeezed lemon, and I think the extra sourness makes the dressing tastes even better.
Not to mention that this is probably every Bulgarian’s favorite salad dressing. For example, when I was growing up, we never bought dressing. Instead, we made it at home. And when you make it yourself, it always tastes so much better, don’t you think?
This simple salad dressing happens to be the only dressing I’ve ever tried that tastes good with all kinds of vegetables.
When you go to the store, there is so much variety and it can be a bit overwhelming. While many of the store-bought dressings claim to be organic, it doesn’t mean they are actually good for you. Organic simply means that they didn’t use any harsh chemicals when growing the ingredients. If you prefer store-bought, make sure to check the ingredients first. Avoid high-fructose corn syrup, trans fats, MSG, or any genetically-modified ingredients.
Something interesting I recently learned is that the label may say “made with olive oil” but it’s usually filler oil, like soy and canola.
You can customize your simple salad dressing as you’d like. I like to keep it as simple as possible.
SIMPLE SALAD DRESSING RECIPE
Makes 4 servings.

1/4 cup of extra virgin olive oil
1/4 cup of apple cider vinegar
juice of 1/2 a lemon (optional)
Himalayan pink salt to taste
Mix all ingredients in a small jar and keep what you don’t use in the fridge. This way it’s ready to grab when you need it.
