Fresh Raspberry Cake Recipe

A few weeks ago, I had a chat with a French lady I recently met. We talked about everything baking and exchanged recipes for quick and yummy cakes, like this fresh raspberry cake. She told me she often makes this recipe at home, and her whole family loves it. When I heard “recipe” and “cake”, I was all ears.

Not sure if you guys know, but I have a major sweet tooth, so baking is something I do for fun. Although it’s challenging to find recipes these days that have less than ten ingredients and don’t require a lot of time to prepare. This is such a bummer; I wouldn’t say I like staying in the kitchen for too long, after about an hour my excitement and enthusiasm about the whole baking process are gone.

Luckily, this fresh raspberry cake takes 5 min to prepare, and another 25 min in the oven. That’s it! Get your cup of tea or coffee ready, cut a slice, and enjoy. It’s so good! So delicious and sweet that it didn’t even make it to the end of the day.

Fresh Raspberry Cake Recipe

Ingredients

  • 4 eggs
  • 1 c sugar
  • 1 tsp baking soda
  • 1 tsp vanilla
  • lemon zest of 1 - 2 lemons
  • 1 c flour
  • 1/2 c butter
  • 2 c frozen raspberries

Instructions

  • Preheat the oven to 350 degrees.
  • First, mix the sugar and eggs well. Then add the baking soda, vanilla, lemon zest, butter and flour to the mix.
  • Grease and flour the cake pan and pour the cake mixture. Add the frozen raspberries on top of the mix.
  • Bake for 25 minutes.

    After attempting to mix the ingredient, I realized that there was no liquid mentioned in the recipe. When I attempted to mix everything I realized it need some liquid. I add milk to the recipe, only estimating how much. Can you tell me if I missed something. Thanks.

      Hi Mary!
      I didn’t use any milk in the recipe. The butter adds all the creaminess you need.
      However, I’m sure it will taste great with milk too.
