Cucumber tomato avocado salad is one of my favorite summer salads that I make at home at least a few times a week. The avocado adds a touch of creaminess while the cucumbers add a little bit of crunch. Simply delicious!
The ingredients are pretty straightforward – cucumbers, tomatoes, avocado. Then you just pour some of my simple salad dressing on top and you’re done.
Tomatoes:
When picking out the tomatoes, I prefer to use either cherry tomatoes or pink tomatoes. Pink tomatoes aka beefsteak tomatoes are usually large, meaty, round and have a bit of a sweet flavor which makes them perfect for salads and sandwiches.
Cucumbers:
I usually prefer either long English cucumbers or baby Persian cucumbers. Mostly because of the taste. I like them because they don’t taste as bitter, have thinner skin and a lot smaller seeds than regular cucumbers.
Avocados:
I pick avocados with darker green skin, not too wrinkly, and not too soft when I apply a gentle squeeze.
Other things you can add to this cucumber tomato avocado salad are feta cheese, red onion, and fresh herbs. Today I’m using dill but it tastes just as good with basil or cilantro. It really depends on your personal preference. Scroll down for the quick recipe!
