This easy watermelon cake recipe does not only look good, but it also tastes delicious and fresh. It’s made with fresh fruits and plain yogurt!
The recipe is inspired by Victoria Beckham. A few years ago, she posted her birthday cake on Instagram. It was fresh watermelon decorated with blueberries and strawberries. Quite unusual for a birthday cake, right?
Ever since then, I couldn’t take the image out of my head. It’s like a fruit salad, which is delicious, but how can we take it up a notch? Keep it fresh and light but add a bit more to it. So I tried it out with a little bit of yogurt (because yogurt goes really well with fruits), and everyone at home approved, so I thought I’d share the recipe here as well.
You simply slice the watermelon in semi-thick rounds, then spread yogurt on top. I’ve seen this done with whipped cream, instead of yogurt. You can do either. I prefer using yogurt because it has so many benefits, probiotics, vitamins, protein, and so on.
The last step is to sprinkle all kinds of berries on top. I cut most of my berries into small pieces, and I also added kiwi for some color.
There are so many different ways to prepare this watermelon cake and to add a variety of toppings on top. As you may know, I like everything as simple as possible, but I’ll also include a few other ideas for you to try below the recipe.
Fresh Watermelon Cake
Ingredients
- 1 watermelon
- 1/4 cup plain yogurt
- 1 cup mixed berries (blueberries, blackberries, strawberries, raspberries)
- 1-2 thin slices kiwi
Instructions
- Slice watermelon in semi-thick round slices.
- Spread the yogurt on top.
- Garnish with the berries and kiwi.
Fresh Watermelon Cake Topping Ideas:
+ Use whipped cream, instead of yogurt.
+ Add nuts for a little crunch. Sliced almonds will work great. You can also try crushed walnuts.
+ If you’re preparing this for your kids, you can add some sprinkles on top of the yogurt (or whipped cream). This always makes my son happy. I usually choose green or yellow sprinkles, so they really stand out from the colorful fruits that you’ll add on top of the yogurt.
+ Add granola. Another thing I’ve tried, and I think it’s very tasty, is adding a few tablespoons of granola on top.
This fresh watermelon cake is such an easy and creative way to serve watermelon, and it takes a few minutes to prepare. I prefer to eat it right away but you can also store it in the refrigerator for a few hours.
